Menu:

Course 1: Choice of one from below:

Tom Kha Kai Soup: Chicken with silky coconut milk in galangal, lemongrass broth, mushrooms

Tom Yum Soup: Spicy shrimp lemongrass broth soup with fresh lime juice, kaffir lime, cilantro, scallions and mushrooms

Wine Pairing: Finca Cayeta, Rías Baixas Albariño Estio

Tasting Notes:

Yellow-straw color. Bright and focused on the nose, with intense mineral aromas that resemble those of the Atlantic Ocean at high tide, accompanied with notes of lime and honeysuckle. Dry and firm on the palate, with tremendous invigorating freshness, which cleanses the palate with elegance and lightness. The finish is long and intense, always leaving saline nuances that constitute the classical typicity of Albariño.

Course 2:

Chai Yo Tasting Trio

Thod Mun Kai: Fried chicken and shrimp fritter, corn, red curry & kaffir lime with cucumber, onion, crushed peanuts with sweet chili sauce

Sakoo Sai Gai: Tapioca Pearls filled with minced shrimp, chicken, pickled relish, cilantro root, crushed peanuts topped with crunchy garlic

Poh Pia Sod: Crispy rice paper stuffed with cabbage, cellophane noodles, pepper, celery and onions served with pineapple sweet chili sauce

Wine Pairing: Finca Cayeta, Rías Baixas Albariño Cuvée

 Tasting Notes:

Yellow-lemon color, expressive with a very complex bouquet, which reveals sophisticated aromas of citrus peel, stone fruit, crushed granite rocks, thyme and salt. On the palate it is lipid and coats the mouth, revealing the same flavors that are appreciated on the nose.

Course 3: Choice of one from below:

Moo Grob Kra Pow: Crispy pork belly, basil, garlic, chive blossoms, bell peppers, onions, Thai chilies over jasmine rice

Khao Soi Ped: Braised duck leg with crispy and steamed egg noodles, shallots, pickled mustard greens, green beans, yellow Thai curry, and red cabbage

Neau Panang: Sous vide 12 hours braised beef cheeks in Panang curry, green beans, bell peppers and jasmine rice

Wine Pairing: Nok Reserva Tempranillo

Tasting Notes: Intense purple color with violet hues. On the nose it brings powerful aromas of black fruit, forest ground, herbs and river stones. The palate is full, balanced, and complex. The wine has soft and fine tannins, and has strong potential for aging.

Course 4:

Pandan Ice Cream

About the winemaker:

Manuel’s love of agriculture sprouted very early as his fondest childhood memories are those hanging out around the family vineyards, Granbazan in Galicia, Mas de Bazan in Valencia, Preludio Andino in Talca (Chile) and Atlantic Gardens Vineyards in Cape May (USA) with his grandfather and father, both Manuel (for whom he was named after).  A third-generation wine producer from the Salnes Valley, a love of Albariño was natural, however, his viticultural curiosity has devoted much Manuel’s professional life to searching terroirs that could share their glory. The highlight of this adventure has been his eleven vintages as owner/winemaker of MOG SELECTIONS VINEYARD producing single parcel wines of tremendous personality around the world, including projects such ÑOK from La Rioja and Finca Cayeta from Rias Baixas.

Manuel’s viticultural and winemaking education has been nurtured for the past 30 years working as an intern and young winemaker in Spain, Australia and the USA. For the past decade, he has focused on finding those small plots in Spain, France, Italy, Portugal, Germany, and Chile that could bring pleasure and value to oenophiles around the globe. This is the real satisfaction that Manuel takes from the wine world and what fuels his soul to keep searching for the next terroir.

About MOG Selections:

MOG SELECTIONS is a wine producing company that aims to share its rare and limited creations directly with the wine aficionado. This business model integrates our wine making capacity to a commercial organization in the USA, Latin America and Europe that operates its own importation and distribution networks. None of our wines are sold through third party providers. We strive to transfer the value we create in the vineyards directly to our patrons, sharing our philosophical outlook on how and why we do, what we do without diluting the message through intermediaries. Everyone at MOG SELECTIONS believes that; life, people, art, travel, science and traditions are fountains of inspiration. We take that inspiration and transform it into wine. We trust our wine collection will bring a little more fun, a little more joy and a little more happiness to the delightful pleasure of drinking wine.
